Friday Letters

Dear Weather, thanks for not stopping us from going to the temple. I don't love this snow, but it could be been worse, right? Dear Chick-Fil-A, I am loving the peppermint shake. I waited all year for you and you were well worth that wait. Dear Pinterest, I'm happy about this new private board option. Dear Iphone5, see you next week. Dear nerves, please don't get the best of me when I say my part in the primary program. Dear The Pie, I'm still smelling you today. I'm not happy about that. Dear Friends, it's good to have you back after 2 years.

Chicken Pesto Paninis

We received a panini grill as a wedding gift almost 5 years ago. To be honest, when we opened that gift I thought it was kind of dumb. What on earth was I going to do with a panini maker? All I could think was that it was going to take up space in my then tiny kitchen. It pretty much sat in storage for 3 whole years until we moved into our house last year. I actually have space in my kitchen to put it somewhere. So I decided to pull it out when we moved in. First of all, what on earth was I waiting for? I love paninis so why didn't I pull it out sooner? One of my favorite paninis to make is a Chicken Pesto Panini. I love how quick and easy it is and when I don't feel like cooking a big elaborate meal (like yesterday) these are perfect.

What you need:
Ciabatta rolls-  or just your favorite bread. Ciabatta rolls are just the perfect bread for paninis. You should be able to find some in your grocery store's bakery section.
Sliced Tomatoes
Cooked Chicken- I quickly pan sauted chicken tenderloins in some EVOO and S&P, let it rest for a few minutes and tore it into pieces
Pesto- your favorite store bought pesto or homemade if you are feeling up to it.
Butter

Assemble the sandwiches. Spread just a little bit of butter on the top bun. Place in the panini press and grill until toasty and melted.

Easy as that.

ENJOY.

Seriously though....

If you do only one thing today please let it be your vote. I know I am going to. It is such a blessing that we are able to vote in our country, many nations around the world do not get this opportunity. So exercise your right and....

But in all seriousness....

London. kate stuff

We spent some time retracing the steps of the beloved princess kate. How could you not want to do such a thing, kate is great.
Buckingham palace was the first stop to see the changing of the guard, I just like the idea of going where kate has been.
Westminster Abbey, where the royal wedding took place, an important stop for any lovers of the royal wedding. It's cool.

What is a TV series or Movie or Song you could listen to or watch over and over and over and never get tired of…feel free to name one of each:

TV series: There are so many that I absolutely love. Vampire Diaries – definitely because I do watch it over and over. I watch it and then I am more than happy to watch it again with Nicole when she comes down to get caught up.

Also, Lost. Loved that show. I really wish that it never got cancelled but that show was amazing and sometimes you just had to re-watch an episode to try and figure out what was going on.

Movie: The Notebook- I have seen this movie a million times and it never gets old. One of my favorite movies of all time.

Oh and Madagascar 2. It is Mia’s favorite movie so we watch it every now and then. I still laugh every time I watch it. It has the funniest one-liners!

London. house of parliament.

I think the House of Parliament is my favorite building in London.
I don't know why either.
The oldest part of this building was built in the 1000's.
It's beautiful at night, but it's a must see in day light to appreciate its architecture.
