Dried Peaches

I don't know if any of you have ever had dried peaches, but if you haven't you should. Put it on your to do list, put it on your bucket list... I don't care what you do just give them a shot. Alright so I acknowledge the fact that I am bias to all things peach. So maybe don't put dried peaches on your bucket list unless you are me, but give them a try just once.
Many of you are used to to dried apples I'm guessing, well dried peaches in my opinion are better.
Dried Peaches = Candy.

Instructions.

Peel & Slice Peaches.
Place sliced peaches on drying rack.
Dehydrate at 140 degrees until soft and pliable ( It'll take somewhere between five and ten hours)
After let the dried peaches cool enough to put in storage containers
We put ours in ziploc bags and throw them in the freezer to snack on throughout the year.
They make for the perfect quick treat.

Peach Sorbetto

Aw yes a box of peaches, nothing makes me happier.....

That is until you give me this book.... The Ciao Bella Book of Gelato & Sorbetta
And then you make Peach Sorbetta. Too good.

Peach Sorbetto
Ingredients:

2 1/2 pounds ( 5 large) peaches
2 teaspoons lemon juice
Simple Syrup

Recipe:
Bring a large saucepan of water to a boil. Using the tip of a paring knife, cut a small x into the bottom of the peaches. Immerse the peaches in the boiling water and blanch for about 1 minute to loosen the skins. Remove peaches, immediately put peaches in a bowl filled with ice water, and let them sit until cool enough to handle.. about 1 minute. Peel the peaches using a paring knife, then remove the pit and roughly chop the flesh.
Place the peach flesh and lemon juice in a food processor and puree until smooth. Pour through a fine mesh strainer into a bowl, pressing down the solids to extract all liquid. discard solids. Cover and refrigerate until cold.
Whick the simple syrup into the peach puree, then pour the mixture into the container of an ice cream machine and churn accordingly to manufacturers instructions.

Simple Syrup

Remove from the heat and let cool, then transfer to a bowl, cover, and refrigerate until cold, at least 1 hour.
